Barbara and Rex Backus are currently making five distinctive true farmhouse cheeses from the milk of La Mancha goats:
An attractive ashed flat-topped cheese encased in white mold with a nice, creamy texture
Barbara and Rex describe this rare seasonal cheese as a "mysterious puck robed in a sauvignon blanc-doused figleaf." Delicious!
A firm, six-pound wheel dusted with paprika. This one is best if aged for a full year.
